Day I knox recommendations

I have a morning appt in knox in March and it also happens to be my daughter's 18th bday. Would like to take her to lunch, check out some cool shops, and also do dinner that evening. Looking for suggestions on different spots to check out. Prefer locally owned spots, but anything locals find interesting is great. Just want to spend the day roaming around.
