Most restaurants are crap. Good gourmet options for different cuisines?

Chennai used to have fewer fine-dining and gourmet restaurants, but the food was high quality. This city has a lot of restaurants, but most of them serve similar food at low quality. Can we make a list of gourmet/fine-dining places for different categories: sushis, noodles, Thai, Vietnamese, etc.?
