School only offers 1 AP... Would this hurt my chances?

I go to a pretty small k-12 charter school with less than 600 people in the entire high school. Due to this, we barely get to pick any of our classes and only offer 1 AP class (APUSH, took it and got a 3). On top of this they dont offer many extracurriculars and the only thing that stands out is that it is 100% IB for grades 11-12. As a junior, its too late to apply to any other schools since I couldn't get in to any others out of district and my current district is horrible. Knowing all of this, would colleges be less likely to accept me knowing that I dont have a lot of stuff available for me to partake in? Or would I be weighed depending on how much I utilized my resources? What could I do to to increase my chances of getting in?
(Note: I'm trying to get into UT Austin in-state)
